Key Lime Pie Cupcakes

Ingredients

12 round gingernut biscuits
175g golden caster sugar
175g baking spread or butter
2 large eggs
1 teaspoon vanilla extract
100ml sour cream
1 teaspoon lime juice
zest of 1 lime
½ teaspoon ginger
175g self raising flour
½ teaspoon bicarbonate of soda

For the filling: mix ingredients together, and leave to cool before filling cupcakes

1 teaspoon melted butter
100ml condensed milk
1 teaspoon lime

For the topping:

400ml double cream (whipped)
1 teaspoon vanilla extract

For decoration: Crushed up ginger nut biscuits and lime segments

Temperature: gas mark 5 / 180℃ electric / 160℃ fan oven

Cooking time: Bake for 20 minutes
