This month is a classic: Old School Sponge Cake

RECIPE

This recipe will fill a disposable foil tray or an 8” x 8”square baking tin.

Sponge:

175 grams baking spread or butter
175 grams sugar
3 large eggs
175 grams self raising flour

Double the quantities if using a deep tray baking tin.

Topping:

300 grams icing sugar
Water
Sprinkles for decoration

If doubling the recipe, you’ll need to adjust your cooking time. I recommend baking between 35-40 minutes.
