‘You are what you eat’
2 basa fillets
1 pack express basmati rice
1 tin black beans
2 cups frozen peas
1 small tin sweetcorn
1 chopped tomato
1/4 sliced red onion
1/2 sliced avocado
1/2 teaspoon paprika
1/2 teaspoon cumin
Add the rice, beans, peas and sweetcorn to a pan; cook through for approx 10 minutes.
Mix the tomato, onion and parsley for the salsa.
Rub the spices into the basa fillets and add to a hot pan. Cook for approx 4-5 minutes on each side or until cooked through.
This recipe makes 2 servings. Split everything between two bowls, adding the lettuce and 1/4 avocado each. You can add a wedge of lime and a dollop of sour cream too.

It’s my birthday month and I’m going to be spending a lot of it celebrating, relaxing, going away, drinking, eating and trying to get through the chocolate I’ve had for my birthday.
This is definitely one of those months where there’s more indulging myself than other months; and I may not get as much exercise in; however, working on my lifestyle habits over the years means I don’t stress or worry about times like this.
None of us should, even though I know so many do.
