What is the secret to baking the perfect bagel? I couldn’t possibly divulge all of their secrets but the crucial trick to successfully creating that famous glossy sheen and chewy crust is to boil the shaped dough before baking. Once they’re safe inside the oven it’s all super scrummy baking smells from there on in. Who else is guilty of loitering in the bread aisle of the supermarket for that very reason? #EauDeDough

Let me tell you, there was no better cure to a wet and stormy day than huddling in the freshly-baked warmth of a bagel, fragrant with the spicy heat of chilli. The golden crust added the perfect crisp to the chew, and the spiciness was a welcome, subtle addition rather than an overpowering flavour.
