Welsh Cake Cupcakes Recipe

SPONGE:

175g Self raising flour
175g Golden caster sugar
175g Baking spread/butter
3 Large eggs
1 Teaspoon Mixed spice
85g Sultanas/currants or raisins

BUTTERCREAM:

250g Unsalted butter
500g Icing sugar
1 Teaspoon mixed spice
30ml Milk

WELSH CAKES:

225g Self-raising flour
110g Butter
75g Caster sugar
1 Egg
60g Sultanas
1 Teaspoon mixed spice
