‘You are what you eat’
Piri Piri Chicken
4 Chicken breasts
Full bag of frozen cauliflower
Half a bag of frozen Peas
2 to /3 Fresh mint leaves - chopped
1/2 Tsp Chilli flakes
1/2 Tsp Paprika
1 Tsp Crushed garlic
Pinch of Salt & pepper
- Mix the chilli, paprika, garlic, salt & pepper together and cover the chicken breasts.
- Cook in the oven on 180C degrees for 30-35 minutes or until cooked through.
- Steam the cauliflower until cooked through.
- Steam the peas in a separate container.
- Mash the cauli once cooked. Add salt & pepper to taste.
- Add the chopped mint to the peas and roughly mash together.
- This makes four meals so the family can enjoy, or you now have a few meals prepped for the week ahead
